Meal Planning Monday

Well hey there guys!! I know, I know, I haven't been very involved on here in a couple weeks. I apologize. I went out of town and then Thanksgiving happened. I'm back though!! I hope each and everyone of you had a wonderful Thanksgiving! The first part of our break we traveled to Dallas for a girls trip and I will definitely make a post for all things Dallas soon. We spent the rest of the week eating, watching all the Christmas movies and spending time with each other. I have spent the last 14 years working every Thanksgiving at the hospital and this year I got to be home with my family. The first part of this year I took a step back and cut my hours and in turn it's not mandatory for me to work holidays. I am so very thankful to get the extra time with my crew. Truly I loved every second. It just felt extra special being together this year.


Kicking off this week with Meal Planning Monday!! This week is absolutely insane for us sooooo this will be a doozy of a week for meals. We have basketball 5 nights this week! Whew. I get tired of eating out though every single night, so I get creative and use my crockpot and it helps have those home cooked comfort meals ready and waiting to scarf down either before or after ball games.

Monday- Crockpot Creamy Ranch Chicken

This is comfort food yummy! I make mashed potatoes, noodles or rice to make the meal complete. Super easy and with only 4 ingredients needed, it can be an easy weeknight meal!


Ingredients:

2-3lbs chicken breast thawed

1 stick cream cheese

2 cans chicken broth

1 packet dry ranch mix


Cook 8-10 hours on low. Serve over your fave carb.


Tuesday- Vegetable Beef Soup

I love winter stews and soups. This is easy and makes a bunch! Pair it with a grilled cheese or spicy crackers and you've got a meal.


Ingredients:

2-3lb chuck roast cut into 1/2 inch pieces and coated in flour

Container of beef broth

1 can carrots

1 can green beans

4 russet potatoes chunked

I can corn

1 can diced tomatoes in tomato juice

Salt pepper

Garlic

Onion

Season salt


Brown your beef chunks then add all the ingredients and cook on stovetop until potatoes are soft which is around 45 minutes.



Wednesday- Spaghetti

Listen Linda. We eat tacos and spaghetti around here weekly. It's easy and the kids love it. When I make out of the ordinary things, they don't eat it, then I get mad and then I'm making ramen noodles or Mac and cheese cups an hour afterwards. So I stay in my lane and don't branch too far out.


Ingredients:

Ha! I'll spare you this. It's straight up a jar of Prego and the fixings. I'll pair a bag of Caesar salad and some French bread with it.


Thursday- Sausage and Potato Skillet

This is one of my guys most fave but easy meals. I love a one pot meal plan as well! Hello less dishes!


Ingredients:

Smoked sausage link

3 russet potatoes

Onion

Corn

Season salt

Garlic


Cut/chop everything and throw it in a skillet with some oil and cook until everything is nice and golden brown. The potatoes do take the longest to cook so sometimes I get them browning before I throw the rest of the business in there.


Friday- This is our only night home this week!! Praise!


Homemade pizzas!

We love making homemade pizzas. It's a fun family incorporated meal. We also live far enough out in the country that we don't have pizza delivery as an option. We can either get it from a pizza place before we leave town or make ourselves. We do both.


Ingredients:

I buy the already made pizza crust (still considering this homemade. No judgement peeps) Buy as many that will feed your fam.

Pizza sauce

Mozzarella cheese

Meats such as pepperoni, Canadian bacon, sausage, hamburger

Veggie toppings (ewww)

Banana

peppers or jalapeños


Make it and bake it! Yum!!


That's a wrap on our week in meals! I forgot to throw in the insane amount of coffee drank, Mac and cheese microwave bowls made, Sonic drive thru for cheese sticks and drinks for a quick snack and lunches packed. That's another post for another day.
